Gone are the days to eat plain Roti Sabji for three meals a day.. And BTW This is the very first time I am including eggplant in my meal. I always hated eggplant in my younger years I always skipped my meals whenever my mum cooked eggplant. But I as grew older I realized multiple delicious kick ass healthy recipes can be cooked by mixing & matching the stuff in our kitchen. Here I have 3-in-1 recipe to have it as a snack or breakfast.
Lets cook it:-
Ingredients:-
- Eggplant
- Bread/ or any bread of your choice
- Oilve oil
- Cheese Slices
- Cucumber
- Barbecue Sauce
- Italian Salad Dressing Or any sauce of your choice
- Oil to fry eggplant
- 1 or 2 tbs Lemon Juice
- Salt
- Red chilli Powder
- Turmeric
- 1tbs olive oil
Directions to cook:-
1st Recipe as a Snack
Take a medium size egg plant & cut a half inch round slices
Take a squeezed lemon or fresh Lemon Juice
Pour few drops of lemon juice on each slice
Now sprinkle all 3 spices (lemon, salt, chilli & turmeric) on each slice
Rub on these spices on both of the sides
Take a non stick pan and pour 1 tbs cooking oil and fry the spiced up eggplant 1-2 minutes from both sides
Here is your yummy eggplant Snack!
Enjoy it as a snack or a side dish with your meal.
Lets move on to 2nd recipe – Simple and Yummy Sandwich
Take a bread of your choice! I used Baguette Bread
Spread olive oil on breads
Place 1 slice of fried eggplant on each bread
Place the similar size cheese slice
Heat it in microwave for half min
Viola! Your simple and yummy eggplant sandwich is ready
